Gluten-Free Cooking Class!

My mom goes to the Mesa LDS cannery every so often for cooking classes that take place each week. A lady from my moms ward teaches it. This lady wanted to teach a Gluten-Free cooking class and my mom volunteered to teach it because she knows a few things because I have Celiac disease and can't have gluten. My mom spent alot of time preparing for this class, typing and printing out handouts with recipes and info, getting all the food, utensils, and dishes ready, and she was really nervous. She wanted my help and so I helped her cook in front of everyone! Scary! We are not experts and people kept asking crazy questions like we knew everything about celiac and gluten free foods. We made a homemade, gluten-free, cream of chicken soup and put it in funeral potatoes, gluten free pizza, and chocolate-peanut butter cookies! Everything turned out well. My mom accidentaly put double the amount of butter in the cookie dough mix and someone caught us and we ended up having to double the recipe. We have soo many cookies!!! Lots of people came up and thanked us at the end and were very excited to try the recipes out at home! There were about 25 people in the class. Peyton did so well and fell asleep on somebodys shoulder! It was pretty scary and FUN! Yay for opportunities for bonding!
